
"What I love about it is how long it takes to eat them," said writer and editor Sarah Rich, talking about artichokes for an interview in my newsletter, 'Making Sense.' "Because meals happen so quickly! I love the cooking, I love the prepping, but sometimes I am a little sad that the meal goes by so fast. So, with artichokes, I love that it's a slow process. It feels like it forces a different pace of life."
Sarah's tips: "I’ll put a slice of lemon, a bay leaf, and peppercorn into the water and just boil them until I can stick a knife through the bottom. And then I usually make a sauce with yogurt, mayonnaise, dill, garlic and lemon. And then everyone gets a whole artichoke."
